A Real Snapper

Today I had Snapper Fillets on the specials menu. I really like snapper... not just as something to sell in the restaurant but also to eat. It's really flavorsome and it has a very nice texture. I would prefer it with the skin on, but the fish supplier already had it taken off. Oh well.

I portioned the fish into 240-250gm fillets. I pan fried it with a bit of seasoning. And while it was cooking I had a dollop of kipfler mash potato ready on a plate, with a drizzling of salsa verde and balsamic glaze around the side. Then I picked up the fish and placed it on top of the mash.

Then on top of the fish I placed a spoonful of Sundried Tomato, Roasted Peppers and Coriander Salsa. I think it goes well with the dish because of its tangy taste. And for added aroma I sprinkled it with fresh lemon zest.

It only took a few minutes to get the Snapper ready, but Ashley seemed to be preoccupied. After much persuasion she finally took the fish out into the restaurant... with her tongue sticking out in contempt. Then later on, when I had a closer look, I saw that she turned the little kernels of blue-tacs on the pass into smiley faces. I think that's her way of keeping everyone in the kitchen happy. Nice! J
