A Tale of Two Kitchens

7:23pm Monday 14 June 2010 Sydney (gmt+10)

Things are sort of falling into place with the new venue. There are still a lot of loose ends and a lot of minor issues that needed to be fixed. But we're slowly getting there. The most important thing is that we have a system in place already and it seems to be working.

I had a few friends come and visit already. Like Jana, who dropped by the day before she flew back to Germany. And Greg, who came over to borrow some deep frying oil. The kitchen is already fully operational with the girls settling in with the set up and the workflow. I wouldn't say it's perfect, but it's a lot more workable than what we had on week one.

The Pork Ribs are a good seller, and also the 650gm Rib Eye Steak. I have to give credit to the meat company that supplies us because their portions are always spot on. But even if it were off a few grams off it's still a massive piece of steak by anyone's standards.

While things are improving with the second venue I still have to spend a considerable amount of time with the other kitchen which thankfully is only a few minutes walk. And being right in front of the water they still get busy even though it's winter. Although there are days when the dinning room upstairs is completely empty. But I really don't worry too much 'coz Rob looks after the day to day operation of the kitchen.

Sometime in February our Robot Coupe food processor broke down. All it needed was a new blade so we ordered one from overseas. Months later the blade arrived, but it was for a different model and it wouldn't fit so we have to send it back. My guess is that we'd probably have it sorted by January 2011. Hehehe! It's just one of the gazillion things that we talk about on the balcony when Greg visits. And of course trying to juggle two kitchens at once can be very tiring so I make the most of my commute time by sleeping.

My schedule's a bit overwhelming sometimes. But despite the endless list of things to do I'm very grateful that I have time with Sheila. And nothing beats sharing a simmering Korean Hot Pot at Seoul Ria on a cold winter's night. :)
