Because things were going well with the way I set up
the kitchen and the food operation at the "venue"
where I was working at since NYE my employers
decided to give me another project just down the
road.
On the outside it seems like a nice place. But the
kitchen was a different story. There was hardly
anything, all the major equipments had to be
installed, all the fridges has to be refitted with
shelves and all the electrical setup had to be
configured. We were basically starting from scratch.
And to add more inconvenience the installation of
new equipment unexpectedly took a lot longer than
scheduled. But it was too late. Truck-loads of
produce and all the things needed in the kitchen (ie.
pots, pans, utensils) arrived and we could not put
them away. We could not do any cooking and
preparation work for an entire day. We were left
with only a few hours to sort everything out and
make the kitchen operational in time for the
Opening. Geez!
But instead of hanging around and waiting anxiously
for things to get done I decided to meet up with
Sheila. And we had yum-cha together. Just by being
with her made me feel a lot better.
Finally we were able to get into the kitchen. It was
a mad rush to get as much mise en place done as
possible. And of course there were still a few
little, frustrating issues than needed ironing out.
But thankfully by Opening Day we were ok.
