Rock Lobster

1:57am Monday 24 May 2010 Sydney (gmt+10)

It's a bit tricky, but my wife and I still find time to go out for dinner despite our busy schedule. And nothing beats sharing a hot pot of vegies, noodles and seafood on a cold autumn evening.

And of course it's always busy at work, especially with the outdoor restaurant. I still try to make time whenever old friends like Randy pass by but sometimes it's so busy that Rob and I don't even have time to go for a break.

A couple of weeks ago we tried serving seafood platters for Mother's Day. And when a great portion of your guests are tourists then you have to be careful when describing what's in it because most of the lobsters sold in Sydney are actually Rock Lobsters... which have one distinct difference with the common Lobsters found in the US and Europe: They don't have claws.

The platter has other seafood like fish and chips, calamari, prawns, oysters, soft shell crabs. Ricky seemed happy with it. But Matt was very cautious with keeping the platters properly balanced on top of the stands.

We also did a few extra desserts that day. Like the sticky date pudding and the white chocolate mousse. So there were a lot of things happening but thank goodness I had my apprentice with me. She only started a few weeks ago. I had to teach her a lot of things from scratch, but she's doing really well and it makes a lot of difference having her around.

And last week Karin finished work and flew back to Estonia. She's got this really funny (and often annoying) habit of sneaking around the kitchen and dipping her finger on whatever stuff she can find and tasting it. Sometimes it backfires on her, especially when she tries something that doesn't taste very nice. Hehehe! We'll miss her.
