Last week I made some risotto. But to make
it more interesting I stuffed it inside a
couple of capsicums. One yellow and one
orange. Of course they have to be ripe, but
firm at the same time otherwise they'd
collapse. The risotto itself had shiitake
mushrooms, garlic, parmesan, onion, and
asparagus. And instead of stock I used a
ready made vegetable bisque. Once they're
all together I finished them off in the
oven. Coolness! :) |
