Aunty Mary Ann and Uncle Lito have
an awesome kitchen. Not only is it
spacious and nicely fitted, there is
also just about every equipment and
utensil needed in running a small
restaurant. So whenever I get a
chance I try to cook something
special for dinner. It's also kind'a
cool to cook for the fun of it
instead of doing it at work, like
what I'm used to. Yesterday I made
Coq-au-vin. (Chicken braised in red
wine.)


Basically all you do is fry some
chicken pieces, whack them into an
oven dish, fill it 2/3 with red wine
and then braise it in the oven on
low heat for an hour or so. Then
reduce the liquid so the flavor
intensifies. And it's done! It's a
very easy dish to make. The only
thing is that you need a bit of
spare time, and at the moment I got
plenty of that! :)
