Renovations are underway in the bistro. What a mess! And while it's quiet I tested the ravioli samples that I received.
It's always best to cook pasta (especially stuffed ones) in a pot of ferociously boiling water. And it is equally important to drain them well. There's nothing more annoying than wet pasta!
A bit of napolitana sauce on top with a sprinkle of parmesan. And I prefer to have it gratinated. Then it's ready! Yummmy!!! It was good ravioli so I think I'll order more from the same pasta maker.

Yup, work was busy. It's quite obvious from the previous updates that were few and far in between. But this week was a bit different. The scheduled renovations in the Bistro meant that almost half of the dining area was unavailable. So it's relatively quiet right now.

The only food stuff that I enjoy as much as a steak is a good bowl of fresh pasta. And I had the opportunity to try some of the samples that I got from the local pasta maker. The Spinach and Fetta ravioli that you can see on top was quite good. As you plunge them into the boiling water you can instantly smell the scent of the pasta. It basically means that they were made no more than a couple of days earlier.

Heavy or overpowering sauces are usually reserved for plain pastas. Just a simple napolitana sauce and a sprinkling of parmesan was perfect for the ravioli since it already has a nice stuffing inside.

It took me a couple of minutes to clean up the bowl. Hehehe! I can't wait to add it to the menu and serve it to our guests. :)
