Steak It Up Yours

2:25am Thursday 11 September 2003 Sydney (gmt+10)

In the back kitchen... Greg, Crystal and Misbah were getting ready for lunch service by going through their fridges. In the evening we were quite busy! It was mostly steaks... and I was too busy to take any pics after I took this one. Basically it's two Waguy Rump fillets, medium-rare.

The first major mise-en-place that I had to do was to clean, trim and portion the Ocean Trout fillets. Not only do I have to cut off the excess fat and loose flesh... ...I also have to carefully pull the fish bones out with a pair of tweezers. On the inset you can see the tip of a bone as I pull it out. The bones can sometimes be up to an inch long. Eeks! It's odd... but somebody ordered ice-cream before the entree or main course. Hehehe! ...then it got really busy. And I was getting orders for burgers by the dozen... the guests seem to crave Roman's burgers!

I call it Roman's burgers because he's been designated with the production of the burger patties. He takes it so seriously that he doesn't even want to show me how he moulds the beef mix into the perfect round shape that they are... hehehe! And when he grills a sample he attentively guards it... as though I'd steal it or something. Hehehe! But anyway, I think his burgers are among the best that I've ever come across. Yummy!!!
