After the lunch service we got ourselves ready to
plate up the new menu. Everyone in the kitchen was
excited! :) ...Kimmie as always was making it all
happen! Here she's plating up the Penne Pasta...
...tossed with Creamy Pumpkin, Green Peas and topped
with Pesto Chicken slices. Mmmmm! Then straight
after she plated up the Fettuccine pasta with Spicy
Napolitana Sauce and marinated Baby Octopus. Yum!!!
For the next dish Thomas and Kimmie teamed up...
...everything has to be perfect and precise...
voila! They put together the Smoked Chicken, Avocado
and Crispy Potato layers... ...and the Salad of
Crispy Pancetta, Rocket, Soft Poached Egg and
Semi-dried Tomatoes. Ooh! Wow! Then Kimmie
immediately got into the next dish... ...the Chicken
Roulade, stuffed with Oyster Mushrooms and wrapped
in crunchy Tofu Skin. Scrumptious!!!
After that we all gathered around as Thomas prepared
the next item... ...the Succulent Tempura Prawns
with Sweet Chili and Sweet Soy Sauce dips.
Delicious!!! =)
Then we lined some of the items for the new menu
just outside the back kitchen for everyone to see.
...Greg's already busy taking down notes about the
dishes...
...at the same time Tara and the other waiters lined
up to have a look... ...while everyone in the
kitchen started preparing the mise-en-place for the
new menu. Cool!!! :)
