I met Jan and we had coffee. I waited for 15 minutes
and I really thought he wouldn't show up. Good thing
he did... because I was really dying to have some
caffeine in me. Hehehe!
Today's entry is called "The Final Frontier" for a
good reason. It's my first duty in the grill section
at this new place where I now work. And it's a big
deal for me! ...because, like what I've said before,
I've always been a Larder chef... but I started
doing the other sections and eventually I ended up
in the grill section... and they don't call it the
GRILL for nothing... and of all days to start off it
was a Friday... which is one of the busiest day at
work. HOLY-STEAK!!! |

It wasn't as busy as I thought it would be... but it
was busy nevertheless. I spent my first hour in the
section going through my "mental notes" from
culinary school because it's been ages since I
handled a grill section. |

Anyway... towards the end of service time... just as
we were cleaning up and packing away our sections
this long docket popped out of the printer. It's a
table of 23... and they're all having meat...
different cuts... and mostly with different doneness
(ie. medium-well, rare, well-done) and for a moment
it made me wish I was doing Larder again. Hehehe!
But I got it out of the way... thanks to Malcolm and
George, who helped me set up the plates. Then after
that Monica turned up... out of nowhere! (She's of
course working somewhere else now.) Oh coolness! |
